Prik Nam Pla

Method
- Thinly slice chiles, garlic, and shallots. Put in a small sauce bowl.
- Add fish sauce and lime juice, and let flavors steep for about 10 mins.
Notes
- Thai chiles are obviously first choice, however serranos are a great substitute.
- If it's too spicy, add a bit of palm sugar.

Fell in love with a minimalist version of this in Thailand where it was used as a dipping sauce for pineapple (technically a minimalist version of Nam Pla Wan). I'm a big fan of Hot Thai Kitchen, Pailin is the GOAT for anything Thai, so when I found her variation of Prik Nam Pla it has been my go-to since.
